CHILLY ECONOMY FIRES UP HOME COOKING
GET CREATIVE WITH YOUR HOME CUISINE AT
CARROLL COMMUNITY COLLEGE

The weak economy is turning cooking into a necessity for some, as dining out is cut from the family budget. About 45 percent of Americans are eating out less this year to save money, a nearly 12 percent increase from 2007, according to BIGResearch, a Worthington, Ohio-based firm that does consumer research.

But that doesn't mean your meals have to be mundane. Carroll Community College is offering cooking classes this fall to help you get creative with your cuisine and save money! Fresh ingredients and fabulous flavors will make your family happy to be at the kitchen table.

All courses are held at the Carroll County Career and Technology Center. Enjoy these non-credit courses cooking courses this fall:

Comfort Pasta Sauces
Quick and easy, pasta is perfect for busy days leading up to the holidays! Sauces, cooked with the freshest herbs and ingredients, are a comfort in hectic times. Expose your senses to fabulous flavors and learn how to prepare uncomplicated and easy pasta with tomato golden breadcrumbs and cheese, penne with roasted vegetables & goat cheese, pasta with ricotta cream and walnuts. Gourmet Gift Baskets
Create a mouthwatering holiday gift basket of goodies made with your own hands. Make and bake the goodies, decorate and assemble them in class and then take your basket and the recipes home. The basket includes homemade English toffee, chocolate dipped fudge brownies, Italian sandwich cookies with raspberry jam and chocolate and more delightful sweets for the holidays. Sicilian Cooking
Discover one of Italy's most exuberant and eclectic cuisines. The ingredients are always wholesome and fresh and eggplant is the island's most popular ingredient. Enjoy the experience of making and tasting eggplant caponata, sausage with peppers/capers in a wine sauce, and pasta with pomodoro crudo, a Sicilian version of tomato sauce but uncooked. Tempting Italian Desserts and Espresso

Alba Johnson, personal chef and owner of Alba's Delicious Dishes, spices up her lively classes with a contagious enthusiasm for cooking. After living in Italy and North Africa for many years, she gained a practical understanding of the ingredients and techniques of the Mediterranean region which is shared with her students through distinctive culinary tips and suggestions.
Tracie Jules loves to bake and loves to share her baking skills. With many years of experience managing her own successful baked dessert business, she honed her skills working with a variety of accomplished pastry chefs. Currently baking at Oregon Ridge Grill, she enjoys sharing her enthusiasm for baking and teaching others the tricks of the trade.

Chef Tim Norwood, a graduate of the Baltimore Culinary Institute, has been teaching culinary arts at the Carroll County Career and Technology Center since 1997. An experienced teacher, Tim enjoys creating unique dishes using basic techniques and then experimenting with the flavors of authentic ethnic ingredients and combining them with bounty found in local grocery stores.
